  • 8 slices regular cut bacon
  • ½ cup packed brown sugar (100g)
  • 2 tablespoons yellow mustard
  • 1 tablespoon honey (optional)
  • ½ teaspoon garlic powder
  • Freshly ground black pepper, to taste
  • Toothpicks for securing bacon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium mixing bowl, stir together ½ cup packed brown sugar, 2 tablespoons yellow mustard, 1 tablespoon honey, ½ teaspoon garlic powder, and freshly ground black pepper to taste until smooth and sticky.
  3. Cut each slice of bacon in half crosswise. Wrap each smokie with one half-slice of bacon, securing it with a toothpick.
  4. Generously coat each bacon-wrapped smokie with the brown sugar glaze using a brush or your fingers.
  5. Place the coated smokies on a parchment-lined baking sheet or a cooling rack set over a baking sheet, leaving space between each.
  6. Bake for 20-25 minutes. Halfway through baking (about 12 minutes in), flip each smokie carefully and brush again with any leftover glaze.
  7. Cool slightly for 5 minutes before serving to allow the glaze to set.
