  • 1/4 cup tequila blanco (60 ml)
  • 1 tablespoon Tajin seasoning, plus extra for garnish

Instructions

  1. Peel and dice about 2 cups of ripe mango. Fresh mango works best, but frozen mango chunks thawed slightly are a good substitute. (5 minutes)
  2. In a small bowl, whisk together 1/4 cup fresh lime juice, 1/4 cup tequila blanco, 1 tablespoon Tajin seasoning, and 2 tablespoons agave nectar or honey until the sweetener dissolves. (3 minutes)
  3. Add the diced mango and the margarita base into a blender. Pulse until smooth but still slightly textured—creamy with some tiny mango bits. Avoid over-blending. (2-3 minutes)
  4. Taste the mixture and adjust by adding more lime juice or Tajin if needed, or extra agave to soften tartness. (1 minute)
  5. Pour the mixture into mini popsicle molds or silicone ice cube trays, leaving a little space at the top. Sprinkle a pinch of Tajin on each for garnish. (5 minutes)
  6. Insert mini popsicle sticks or toothpicks into the molds. If using silicone trays, you can freeze without sticks. (1 minute)
  7. Freeze the molds for at least 4 hours, ideally overnight for best texture. (4+ hours)
  8. To serve, run warm water briefly over the outside of the molds to loosen and unmold the popsicles. Arrange on a platter with lime wedges and extra Tajin. (2 minutes)

Use ripe mangoes for best flavor and texture. Fresh lime juice is essential for brightness. Tajin seasoning adds a spicy, tangy kick; substitute with chili powder, salt, and lime zest if unavailable.
