Ingredients

  • 1 1/2 cups (225 grams) frozen pineapple chunks
  • 1 cup (240 ml) canned full-fat coconut milk
  • 1 to 2 tablespoons (1530 ml) honey or agave nectar
  • 1 tablespoon (15 ml) fresh lime juice
  • 1/2 teaspoon (2.5 ml) vanilla extract (optional)
  • 1 cup (120 grams) ice cubes
  • Optional: handful of fresh spinach
  • Optional: scoop of protein powder

Instructions

  1. Measure and prep ingredients: frozen pineapple chunks, coconut milk, honey or agave, fresh lime juice, vanilla extract if using, and ice cubes.
  2. Add pineapple, coconut milk, honey, lime juice, vanilla, and ice cubes to the blender. Add spinach or protein powder if desired.
  3. Blend on low speed, gradually increasing to high, until smooth and creamy with no large chunks.
  4. Taste and adjust sweetness or thickness by adding more honey/agave or coconut milk/cold water as needed.
  5. Serve immediately in chilled glasses or mason jars, garnished with a pineapple wedge or toasted coconut flakes.

Notes

Use full-fat coconut milk for creaminess. Fresh lime juice is essential for brightness. Use frozen pineapple chunks to chill without watering down. Adjust sweetness to taste. Avoid overblending to keep smoothie cold and refreshing.
