  • 3 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped (packed in oil, drained)
  • 2 cups fresh baby spinach
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ cup dry white wine (e.g., Sauvignon Blanc), optional
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes, optional
  • Salt and pepper, to taste
  • Fresh basil leaves, chopped (for garnish)
  • Squeeze of fresh lemon juice

Instructions

  1. Rinse and pat dry the shrimp. Season lightly with salt and pepper.
  2. Heat 2 tablespoons butter over medium heat in a large skillet. Add minced garlic and cook until fragrant, about 1 minute, avoiding browning.
  3. Add shrimp in a single layer and cook 2 minutes per side until pink and slightly golden. Remove shrimp and set aside.
  4. Add remaining tablespoon of butter to the skillet. Stir in sun-dried tomatoes and spinach, cooking until spinach wilts, about 2 minutes.
  5. Pour in white wine to deglaze the pan, scraping up browned bits. Simmer 1-2 minutes to reduce slightly.
  6. Lower heat and stir in heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes if using. Cook gently until cheese melts and sauce thickens, about 3 minutes.
  7. Return shrimp to the pan and heat through for about 1 minute. Adjust seasoning with salt, pepper, and lemon juice.
  8. Garnish with fresh basil and serve immediately over pasta, rice, or with crusty bread.

Notes

Do not overcook the shrimp to avoid rubbery texture. Keep heat medium-low when adding cream to prevent sauce curdling. Use fresh garlic for best flavor. White wine is optional but adds brightness; chicken broth can be a substitute. For dairy-free, swap butter and cream with coconut oil and full-fat coconut milk.
