A quick and easy recipe featuring salmon fillets glazed with a sweet and savory brown sugar bourbon sauce, perfect for weeknight dinners or small gatherings.

  • 4 skin-on salmon fillets (about 6 oz / 170 g each)
  • 1/4 cup (50 g) packed brown sugar (dark or light)
  • 3 tablespoons (45 ml) bourbon
  • 2 tablespoons (30 ml) soy sauce (low-sodium optional)
  • 2 cloves garlic, minced
  • 1 tablespoon (15 ml) freshly squeezed lemon juice
  • 1 tablespoon (15 ml) olive oil
  • Freshly ground black pepper, to taste
  • Optional garnish: chopped fresh parsley or chives

Instructions

  1. Pat the salmon fillets dry with paper towels and season both sides lightly with black pepper.
  2. In a small bowl, whisk together brown sugar, bourbon, soy sauce, minced garlic, and lemon juice until the sugar starts to dissolve. Set aside.
  3. Heat a non-stick or cast iron skillet over medium-high heat and add olive oil. Heat until shimmering but not smoking, about 1-2 minutes.
  4. Place salmon skin-side down in the pan. Press gently with a spatula to prevent curling. Cook for 4-5 minutes without moving until skin is crisp and salmon is cooked about two-thirds through.
  5. Carefully flip the salmon over and reduce heat to medium-low.
  6. Pour the brown sugar bourbon glaze over the salmon fillets. Spoon glaze over the top as it simmers. Cook for another 3-4 minutes, basting occasionally, until glaze thickens and coats the salmon. Salmon should be opaque and flake easily.
  7. Remove from heat. Sprinkle with fresh chopped parsley or chives if desired.
  8. Serve immediately with your choice of sides, drizzling any extra glaze from the pan over the top.

Notes

Pat salmon dry to ensure a good sear. Keep an eye on the glaze to avoid burning; lower heat if it starts to smoke. Remove salmon when it flakes easily but is still moist inside. For gluten-free, substitute tamari for soy sauce. Variations include adding sriracha for spice or using maple syrup instead of brown sugar.
