  • 1 2/3 cups lukewarm water (400ml)
  • 2 tsp instant yeast
  • 2 tsp salt
  • 2 tbsp olive oil

Instructions

  1. In a large mixing bowl, combine the flour, salt, and yeast. Gradually add the lukewarm water and olive oil, stirring with a wooden spoon until a sticky dough forms. This will take about 5 minutes.
  2. Cover the bowl with a clean kitchen towel and let the dough rest for 15 minutes. Then, lightly stretch and fold the dough over itself a few times to develop the gluten. Repeat this process every 30 minutes for the next 2 hours.
  3. After the stretching and folding, cover the bowl again and let the dough rise for 1-2 hours, or until it has doubled in size. You’ll know it’s ready when it’s puffed up and jiggly.
  4. Generously flour your work surface and gently turn out the dough. Divide it into two equal portions, being careful not to deflate it too much. Shape each piece into a rough rectangle by folding the edges inward.
  5. Place the shaped loaves on a well-floured baking sheet, cover them with a towel, and let them rise for another 30-45 minutes. Preheat your oven to 450°F (230°C) while they rise.
  6. Once the dough has risen, bake the loaves in the preheated oven for 20-25 minutes, or until the crust is golden brown and sounds hollow when tapped. Let cool on a wire rack before slicing.
