A foolproof recipe for a juicy, tender NY strip steak cooked using the reverse sear method in a cast iron skillet with garlic butter for rich flavor and a perfect crust.

Ingredients

Scale
  • 1 NY Strip Steak (1.5 to 2 inches thick, about 1216 oz)
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, smashed
  • 23 sprigs fresh thyme or rosemary
  • 1 tablespoon olive oil (or high smoke point oil like avocado oil)

Instructions

  1. Preheat your oven to 250°F (120°C).
  2. Pat your NY strip dry with paper towels.
  3. Season both sides generously with kosher salt and freshly ground black pepper.
  4. Place the steak on a wire rack set inside a baking sheet to allow air circulation. Insert a meat thermometer probe into the thickest part of the steak.
  5. Put the steak in the oven and cook until internal temperature reaches about 110°F (43°C) for medium-rare, about 20-30 minutes depending on thickness.
  6. Heat your cast iron skillet over high heat until very hot (a drop of water should sizzle and evaporate instantly).
  7. Add olive oil to the pan and swirl to coat.
  8. Transfer the steak to the skillet and sear for about 1-2 minutes per side, until a deep brown crust forms.
  9. Add butter, smashed garlic cloves, and fresh thyme or rosemary to the pan.
  10. Tip the pan slightly and spoon the melted garlic butter over the steak repeatedly for about 1 minute.
  11. Remove the steak from the pan and rest it on a cutting board for 5-10 minutes.
  12. Slice against the grain and serve drizzled with any leftover garlic butter from the pan.

Notes

Use a meat thermometer to ensure perfect doneness. Pat steak dry before seasoning to get a good crust. Rest steak after cooking to redistribute juices. If no wire rack, place steak directly on baking sheet and flip halfway through oven cooking. Keep cast iron skillet well-seasoned for best results. Butter can be substituted with dairy-free margarine for dairy-free option. Fresh herbs can be swapped for dried (use about 1 teaspoon).
