Ingredients

Scale
  • 8 chicken drumsticks (about 3 pounds or 1.4 kg), skin-on and bone-in
  • 1/4 cup (85 g) honey (raw or mild, clover or wildflower)
  • 1/2 cup (120 ml) smoky BBQ sauce
  • 2 tablespoons (30 ml) olive oil
  • 1 teaspoon (3 g) garlic powder
  • 1 teaspoon (3 g) smoked paprika
  • Salt to taste (kosher recommended)
  • Black pepper to taste (freshly ground)
  • Optional: 1/4 teaspoon (1 g) cayenne pepper for heat
  • Optional: almond or coconut flour for dusting (for extra crispiness, gluten-free option)
  • Optional: fresh lemon juice splash (for warmer months)
  • Optional: maple syrup instead of honey (for dairy-free variation)

Instructions

  1. Preheat oven to 425°F (220°C). Line a rimmed baking sheet with aluminum foil and place a wire rack on top.
  2. Pat chicken drumsticks dry with paper towels to ensure crispy skin.
  3. In a large bowl, toss drumsticks with olive oil, garlic powder, smoked paprika, salt, pepper, and cayenne pepper if using. Coat evenly.
  4. Arrange drumsticks in a single layer on the wire rack, skin side up, spacing for air circulation.
  5. Bake for 25 minutes to render fat and start crisping skin.
  6. While baking, whisk together honey and BBQ sauce in a small bowl until smooth.
  7. Remove drumsticks from oven and brush honey-BBQ glaze generously over each piece.
  8. Return to oven and bake for 10-12 minutes, brushing glaze on twice more at 4-minute intervals to build sticky layers.
  9. Switch oven to broil on high for the last 2-3 minutes, watching closely to caramelize glaze and crisp skin without burning.
  10. Remove from oven and let drumsticks rest for 5 minutes before serving to lock in juices.

Notes

Patting the chicken dry is essential for crispy skin. Use a wire rack to allow air circulation and prevent soggy bottoms. Brush glaze after initial baking to avoid burning. Watch broiler carefully to caramelize glaze without burning. Meat thermometer recommended to ensure internal temperature of 165°F (74°C). Rest drumsticks before serving to keep them juicy. For gluten-free, use gluten-free BBQ sauce and optionally dust skin with almond or coconut flour. Maple syrup can replace honey for a dairy-free variation. Optional lemon juice brightens flavor in warm months.
