  • 4 cups watermelon, cubed (seedless, ripe, and juicy)
  • 1 cup feta cheese, crumbled
  • 1/2 cup fresh mint leaves, roughly chopped or torn
  • 1/2 cup balsamic vinegar
  • 12 tablespoons sugar or honey
  • 1 tablespoon extra virgin olive oil (optional)
  • Pinch of freshly ground black pepper (optional)

Instructions

  1. Slice the watermelon into 1-inch cubes using a sharp knife, removing any seeds. Place cubes in a large mixing bowl.
  2. In a small saucepan, combine balsamic vinegar and sugar or honey. Simmer over medium heat, stirring occasionally, until reduced to a syrupy glaze (about 8-10 minutes). Remove from heat and let cool slightly.
  3. Rinse and pat dry fresh mint leaves. Roughly chop or tear and add to the watermelon cubes.
  4. Crumble feta cheese over the watermelon and mint mixture.
  5. Drizzle extra virgin olive oil over the salad (if using) and gently toss all ingredients together. Add a pinch of freshly ground black pepper if desired.
  6. Drizzle the cooled balsamic glaze over the salad just before serving.
  7. Serve immediately for best texture and flavor. Optionally chill for up to 30 minutes before serving.
