A refreshing and playful summer dessert featuring a star-shaped watermelon slice topped with lightly sweetened cream cheese frosting and fresh fruit. Perfect for brunches, parties, and warm days.

Ingredients

Scale
  • 1 ripe, seedless watermelon slice about 1 to 1.5 inches thick
  • 8 ounces full-fat cream cheese, softened to room temperature
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Honey or maple syrup (optional, for drizzling)
  • Fresh fruit toppings such as blueberries, sliced strawberries, kiwi slices, raspberries, or pomegranate seeds
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Slice the watermelon into a thick round about 1 to 1.5 inches thick and trim off the rind to leave just the juicy red flesh.
  2. Use a star-shaped cookie cutter to cut the watermelon round into a star shape, pressing firmly and twisting slightly to cut through. Remove excess watermelon around the star. Alternatively, carefully carve the star shape with a sharp knife.
  3. In a medium mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Beat with an electric mixer or whisk until smooth and fluffy, about 3 to 4 minutes.
  4. Spread the cream cheese frosting evenly over the top surface of the watermelon star using a spatula or spoon, aiming for a thin, smooth layer.
  5. Arrange fresh fruit toppings on top of the frosting in a colorful, inviting pattern. Garnish with fresh mint leaves if desired.
  6. Optionally, drizzle honey or maple syrup over the fruit for extra sweetness and a glossy finish.
  7. Serve immediately for the freshest bite or chill in the refrigerator for up to 30 minutes before serving to let flavors meld.

Notes

Keep the knife sharp and cookie cutter clean and dry for best cuts. Pat juicy fruits dry before topping to avoid sogginess. Use a light hand when spreading frosting to balance flavors. Prepare watermelon and frosting separately if making ahead to prevent sogginess. Serve chilled or at room temperature. For vegan version, use plant-based cream cheese and maple syrup instead of honey.
