  • 2 tablespoons elderflower cordial (e.g., St-Germain or Belvoir)
  • Juice of 1/2 lime (about 1 tablespoon)
  • 1 cup (8 fl oz / 240 ml) chilled sparkling water
  • Ice cubes, as needed
  • A few sprigs fresh mint leaves for garnish (optional)
  • 1 teaspoon simple syrup (optional)

Instructions

  1. Wash the cucumber thoroughly and slice 1/2 of a medium cucumber into thin rounds (about 1/8 inch or 3 mm thick). Set aside a few slices for garnish.
  2. Cut the lime in half and juice it using a citrus juicer or by hand, avoiding seeds. You’ll need about 1 tablespoon of fresh lime juice.
  3. In a mixing glass or small pitcher, combine 2 tablespoons elderflower cordial, the fresh lime juice, and 1 teaspoon simple syrup if using. Stir gently to blend.
  4. Add the cucumber slices to the mixture.
  5. Fill your serving glass with ice cubes—enough to chill but not overcrowd.
  6. Slowly pour 1 cup (8 fl oz) chilled sparkling water over the ice and cucumber mixture. Stir gently once or twice to combine without losing fizz.
  7. Garnish with a sprig or two of fresh mint and a couple of reserved cucumber slices. Serve immediately.

Notes

Use chilled sparkling water and ice cubes straight from the freezer to keep bubbles lively. Avoid over-stirring to preserve fizz. Thin cucumber slices release flavor without overpowering. Optional simple syrup can be omitted or replaced with stevia for a low-calorie version. Muddling cucumber lightly can enhance flavor but avoid over-muddling to prevent bitterness. Prepare base up to 24 hours ahead and add sparkling water and ice just before serving.
