A refreshing and easy-to-make cocktail that balances the natural sweetness of fresh watermelon with a spicy kick from jalapeño, perfect for summer gatherings.

Ingredients

  • 3 cups fresh watermelon, cubed and deseeded
  • 1 small jalapeño, sliced thinly (seeds removed for milder heat or left in for extra kick)
  • 2 ounces tequila blanco
  • 1 ounce fresh lime juice (about 1 large lime)
  • 1/2 ounce agave syrup or simple syrup (adjust to taste)
  • 1/2 ounce orange liqueur (Triple Sec or Cointreau, optional)
  • Salt for rimming the glass (coarse sea salt or chili-lime salt)
  • Ice cubes for shaking and serving
  • Watermelon wedges and jalapeño slices for garnish

Instructions

  1. Place 3 cups of watermelon cubes and sliced jalapeño (start with half the jalapeño, add more if desired) into a blender. Pulse until smooth but not watery, about 30 seconds. Optionally strain through a fine mesh sieve to remove pulp.
  2. In a cocktail shaker, combine 2 ounces tequila blanco, 1 ounce fresh lime juice, 1/2 ounce agave syrup, 1/2 ounce orange liqueur, and 3 ounces of the watermelon-jalapeño puree. Add a handful of ice cubes.
  3. Seal the shaker and shake vigorously for about 15 seconds until chilled.
  4. Rub a lime wedge around the rims of glasses, then dip into coarse salt or chili-lime salt to rim.
  5. Fill glasses with fresh ice cubes. Strain the margarita mixture evenly into each glass.
  6. Garnish with a small watermelon wedge and a thin jalapeño slice on the rim. Serve and enjoy.

Notes

Adjust jalapeño heat by removing or including seeds. Use fresh lime juice and quality tequila for best flavor. Strain the puree for a smoother texture. Chill glasses ahead for longer-lasting cold drinks. Agave syrup can be swapped with honey or sugar-free sweetener. Frozen watermelon chunks can be used if fresh is unavailable.
