Ingredients

Instructions

  1. Prepare the Pulled Pork: Warm leftover pulled pork gently in a pan with BBQ sauce for about 5 minutes, stirring occasionally. If using store-bought, toss with sauce and set aside. Keep warm in a covered dish.
  2. Make the Black Bean Patties: In a medium bowl, mash black beans until mostly smooth but still a bit chunky. Stir in breadcrumbs, chopped cilantro, ground cumin, garlic powder, and a pinch of salt. Form into 6 small patties about 2 inches wide.
  3. Cook the Black Bean Patties: Heat a tablespoon of oil in a skillet over medium heat. Cook patties 4-5 minutes per side until golden and firm. Remove and keep warm.
  4. Caramelize the Onions: Slice onions thinly. In the same skillet, add oil or butter, reduce heat to low, and cook onions slowly for 20-25 minutes, stirring occasionally until deep golden and sweet. Season lightly with salt.
