  • ½ cup ketchup
  • 1 tablespoon Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika

  • 2 tablespoons olive oil

Instructions

  1. Rinse 1 cup dried navy beans and soak them overnight in plenty of water (about 8 cups). For quick-soak, boil beans for 2 minutes, then cover and let sit for 1 hour.
  2. Drain soaked beans and place in a large pot with fresh water to cover by 2 inches. Bring to a boil, then reduce heat and simmer gently for 45-60 minutes until beans are tender but not mushy. Drain and set aside.
  3. Heat 2 tablespoons olive oil in a Dutch oven over medium heat. Add finely chopped onion and cook for 5 minutes until translucent. Stir in minced garlic and cook 1 more minute until fragrant.
  4. Stir in brown sugar, ketchup, Dijon mustard, apple cider vinegar, Worcestershire sauce, and smoked paprika. Cook for 2-3 minutes, stirring frequently, until sugar dissolves and sauce thickens slightly.
  5. Gently fold in cooked beans and drained pineapple chunks. Stir carefully to coat evenly without breaking the beans.
  6. Reduce heat to low, cover, and simmer for 20-25 minutes to marry flavors. Stir occasionally and add a splash of water if sauce gets too thick.
  7. Season with salt and black pepper gradually, tasting as you go to balance sweetness and savory flavors.
  8. Remove from heat and let beans rest for 5 minutes before serving to thicken sauce and deepen flavors.
