An effortless and comforting overnight French toast bake featuring layers of brioche, cream cheese, and fresh strawberries, perfect for a special breakfast or brunch.

Ingredients

Scale
  • 8 cups brioche or challah bread, cubed (day-old or slightly stale)
  • 1 ½ cups fresh strawberries, sliced
  • 8 ounces cream cheese, softened and cut into small cubes
  • 6 large eggs, room temperature
  • 2 cups whole milk (2% or full-fat; dairy-free milk like oat or almond can be used)
  • ½ cup heavy cream (can be replaced with extra milk)
  • ½ cup granulated sugar (adjust to taste)
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon (optional)
  • ¼ teaspoon salt
  • Powdered sugar for dusting (optional garnish)

Instructions

  1. Cube about 8 cups of brioche or challah bread into roughly 1-inch pieces. Cut 8 ounces of cream cheese into small cubes. Set both aside.
  2. In a 9×13-inch baking dish, spread half of the bread cubes evenly. Scatter half of the cream cheese cubes and half of the sliced strawberries over the bread. Repeat the layering with the remaining bread, cream cheese, and strawberries.
  3. In a large mixing bowl, whisk together 6 large eggs, 2 cups whole milk, ½ cup heavy cream, ½ cup granulated sugar, 2 teaspoons vanilla extract, 1 teaspoon ground cinnamon, and ¼ teaspoon salt until smooth and well combined.
  4. Slowly pour the custard evenly over the layered bread, cream cheese, and strawberries. Press gently on the bread to help it soak up the custard.
  5. Cover the dish tightly with plastic wrap or foil and refrigerate for at least 6 hours or overnight.
  6. Remove the dish from the fridge about 20 minutes before baking. Preheat oven to 350°F (175°C). Bake uncovered for 45 to 50 minutes, or until the top is golden brown and the custard is set.
  7. Let the bake cool for about 10 minutes after baking. Dust with powdered sugar if desired, slice into squares, and serve warm with maple syrup or whipped cream.

Notes

Use day-old brioche or challah bread for best custard absorption. Refrigerate overnight to allow custard to soak fully. If top browns too quickly, tent with foil halfway through baking. For vegan version, substitute eggs with flax or chia eggs, use plant-based milk and vegan cream cheese.
