  • 1/3 cup (67g) granulated sugar

  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Lightly butter your oven-safe skillet or baking dish, then dust with a little flour or cocoa powder to prevent sticking.
  3. In a medium bowl, whisk together 2 large eggs, 1/3 cup granulated sugar (67g), and 1 teaspoon vanilla extract until pale and slightly frothy, about 2 minutes.
  4. Slowly pour in 4 tablespoons (57g) melted unsalted butter while whisking gently to combine.
  5. Warm Nutella slightly (about 15 seconds in the microwave) and fold it into the wet mixture until smooth and uniform.
  6. Sift 1/3 cup all-purpose flour (43g) and a pinch of salt into the batter. Gently fold everything together with a spatula until just combined; do not overmix.
  7. Pour batter into the prepared pan and smooth the top with a spatula.
  8. Bake for 12-14 minutes until edges are set and slightly firm but the center is soft and a little jiggly. Check after 10 minutes to avoid overbaking.
  9. Remove from oven and let cool for 2 minutes to allow the lava to set slightly.
  10. Serve warm, optionally dusted with powdered sugar or topped with vanilla ice cream.
