  • 1 medium carrot, finely grated
  • 1 small zucchini, finely grated and squeezed to remove excess water
  • ½ small onion, finely chopped
  • 2 cloves garlic, minced
  • ⅓ cup breadcrumbs (35 g), plain or seasoned
  • 1 large egg, room temperature
  • 1 tablespoon Worcestershire sauce
  • ¼ cup ketchup or tomato sauce (60 ml), plus extra for topping
  • Salt and pepper, to taste
  • 1 teaspoon dried herbs (Italian seasoning or a mix of oregano and basil)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grate the carrot and zucchini finely. Place the zucchini in a clean kitchen towel and squeeze out excess moisture to avoid soggy muffins.
  3. In a large bowl, combine the ground turkey, grated carrot, grated zucchini, chopped onion, and minced garlic.
  4. Add the breadcrumbs, egg, Worcestershire sauce, ketchup, dried herbs, salt, and pepper. Mix gently but thoroughly until the mixture is moist and holds together when pressed.
  5. Lightly grease or line a 12-cup muffin tin. Scoop the mixture evenly into the cups, pressing down gently to shape little meatloaves.
  6. Spread a small dollop of ketchup on top of each muffin for a glaze.
  7. Bake on the middle rack for 25-30 minutes, or until the internal temperature reaches 165°F (74°C) and the tops are lightly browned.
  8. Let the mini meatloaf muffins rest in the tin for 5 minutes before removing to help them hold their shape and stay juicy.

Notes

Squeeze excess moisture from zucchini to prevent soggy muffins. Use room temperature eggs for better binding. Mix gently to avoid tough muffins. Check doneness with a thermometer aiming for 165°F internal temperature. Adding an extra tablespoon of breadcrumbs can help if mixture is loose. Muffins can be baked in an air fryer at 350°F (175°C) for about 15 minutes, flipping halfway.
