Quick and tasty Italian sub pinwheels perfect for lunchboxes, combining deli meats, provolone cheese, Italian dressing, and fresh veggies rolled in tortillas.

  • 2 large flour tortillas (about 10-inch diameter; whole wheat or gluten-free alternatives optional)
  • 45 slices Italian deli meats per tortilla (salami, pepperoni, capicola)
  • 34 slices provolone cheese per tortilla (mozzarella or Swiss as variations)
  • About 1 tablespoon (15 ml) Italian dressing per tortilla
  • 68 fresh basil leaves per tortilla (or dried Italian herbs)
  • 1/4 cup (60 g) roasted red pepper strips per tortilla
  • 1/2 cup (15 g) shredded lettuce or baby spinach per tortilla
  • Optional: 2 tablespoons (30 g) sliced black olives or banana peppers
  • Optional add-ons: cream cheese or pesto spread

Instructions

  1. Lay out 2 large tortillas on a clean flat surface.
  2. Lightly brush or drizzle about 1 tablespoon (15 ml) of Italian dressing evenly over each tortilla without soaking.
  3. Place 3-4 slices of provolone cheese on each tortilla, covering the surface but leaving a small edge uncovered.
  4. Layer 4-5 thin slices of salami, pepperoni, and capicola evenly over the cheese, overlapping slightly.
  5. Scatter 6-8 basil leaves and 1/4 cup (60 g) roasted red pepper strips evenly on top.
  6. Sprinkle 1/2 cup (15 g) shredded lettuce or baby spinach over the filling.
  7. Add optional sliced black olives or banana peppers if desired, about 2 tablespoons (30 g).
  8. Starting from one edge, roll the tortilla tightly but gently, keeping the filling inside.
  9. Wrap the roll tightly in plastic wrap or parchment paper and refrigerate for at least 15 minutes to firm up.
  10. Using a sharp knife, cut the roll into 1-inch (2.5 cm) thick slices.
  11. Arrange pinwheels on a plate or pack into lunchboxes.

Notes

Use cold ingredients to keep rolls firm and slices clean. Do not over-soak tortillas with dressing to avoid sogginess. Chill rolls before slicing to maintain shape. Customize fillings as desired. For dairy-free, use vegan cheese and dairy-free dressing. For vegetarian, omit deli meats and add grilled veggies or marinated artichokes.
