Instructions

  1. Prepare the marinade: In a mixing bowl, whisk together honey, lime juice, minced garlic, chili powder, cumin, salt, pepper, and olive oil until smooth and combined.
  2. Add chicken: Place the chicken breasts into the crockpot. Pour the honey-lime marinade evenly over the chicken, turning pieces to coat well. Ensure chicken is mostly submerged in the sauce.
  3. Cook low and slow: Cover and cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until chicken reaches an internal temperature of 165°F (74°C) and is tender enough to shred easily.
