  • 23 pounds beef chuck roast
  • 2 cups low-sodium beef broth
  • 1 packet (about 1/4 cup) French onion soup mix
  • 3 garlic cloves, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 12 mini slider buns (Parker House style or Hawaiian rolls)
  • 12 slices provolone or Swiss cheese (optional)

Instructions

  1. Trim excess fat from the beef chuck roast and pat dry with paper towels.
  2. In a small bowl, combine French onion soup mix, minced garlic, Worcestershire sauce, dried thyme, salt, and pepper. Stir well.
  3. Pour beef broth into the crockpot. Place the roast on top and rub the seasoning mixture evenly over the beef.
  4. Cover and cook on low for 8 hours or on high for 4-5 hours until beef is fork-tender.
  5. Remove the roast with tongs and place on a cutting board. Shred or thinly slice the meat with two forks or a sharp knife.
  6. Return shredded beef to the crockpot juices to soak up the flavor.
  7. Slice mini slider buns horizontally. Pile shredded beef on the bottom halves and top with cheese slices if desired.
  8. Optional: Place assembled sliders on a baking sheet and broil for 2-3 minutes until cheese melts and buns are lightly toasted.
  9. Serve sliders warm with au jus from the crockpot in small dipping bowls.

Notes

Keep an eye on liquid level during cooking; add broth or water if it reduces too much. Let meat rest before shredding for juicier texture. For thicker au jus, add cornstarch slurry and cook on high for 10-15 minutes. Optional to broil sliders for melted cheese and toasted buns.
