  • 1 teaspoon vanilla extract
  • Pink or white candy melts (optional, for coating)
  • Freeze-dried strawberry powder (optional, for dusting)

Instructions

  1. Puree the strawberries in a blender or food processor until smooth. Strain through a fine mesh sieve if desired for a silky ganache without seeds.
  2. Heat the heavy cream in a small saucepan over medium-low heat until it just begins to simmer, about 3-4 minutes. Avoid boiling.
  3. Place the white chocolate chips or chopped chocolate in a medium heatproof bowl. Pour the hot cream over the chocolate and let sit for 2 minutes to soften.
  4. Gently stir the chocolate and cream together with a spatula until completely smooth and glossy. Add the strawberry puree, champagne, softened butter, and vanilla extract. Stir until fully combined.
  5. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or until firm enough to scoop.
  6. Using a small cookie scoop or spoon, portion the chilled ganache into bite-sized balls (about 1 inch diameter). Place on a parchment-lined baking sheet and chill for 30 minutes.
  7. Melt candy melts or white chocolate in a microwave-safe bowl in 20-second intervals, stirring between each until smooth.
