A creamy, spicy buffalo chicken dip made effortlessly in a slow cooker, perfect for game day parties and casual gatherings.

Ingredients

Scale
  • 3 cups shredded cooked chicken (about 450g)
  • 8 oz cream cheese, softened (225g)
  • 1 cup buffalo sauce (240ml)
  • 1/2 cup ranch dressing (120ml)
  • 1 cup shredded cheddar cheese (115g)
  • 1 cup shredded mozzarella cheese (115g)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare the chicken by removing skin and bones from rotisserie chicken and shredding into bite-sized pieces (about 3 cups).
  2. Soften the cream cheese by letting it sit out for 15-20 minutes.
  3. In a medium mixing bowl, combine softened cream cheese, buffalo sauce, and ranch dressing. Stir until smooth and creamy.
  4. Add garlic powder, onion powder, salt, and pepper to taste. Stir to incorporate evenly.
  5. Add shredded chicken to the slow cooker insert. Pour the cream cheese mixture over the chicken and stir well to coat evenly.
  6. Sprinkle shredded cheddar and mozzarella cheese on top, folding some into the mixture if desired.
  7. Cover and cook on low for 2.5 to 3 hours, stirring every 45 minutes to keep cheese melting evenly and prevent sticking.
  8. Before serving, taste and adjust seasoning if needed.
  9. Serve warm, keeping the crockpot on the warm setting during the party.

Notes

If slow cooker runs hot, add a splash of chicken broth during cooking to keep moist. Stir every 30-45 minutes to prevent burning and ensure even melting. Softening cream cheese before mixing is essential for smooth texture. Can substitute ranch dressing with Greek yogurt or blue cheese dressing. For dairy-free, use vegan cream cheese and dairy-free shredded cheese. Can bake in oven at 350°F for 25-30 minutes as an alternative.
