  • 1/2 cup (about 60g) crushed candy canes, roughly chopped

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper or grease it well.
  2. Melt 1/2 cup (113g) unsalted butter in a microwave-safe bowl until liquid but not hot, about 30 seconds to 1 minute. Let cool slightly.
  3. In a large bowl, whisk together the melted butter and 1 cup (200g) granulated sugar until smooth and glossy.
  4. Beat in 2 large eggs one at a time, mixing well after each addition. Stir in 1 teaspoon vanilla extract and 1/2 teaspoon peppermint extract carefully.
  5. In a separate bowl, sift together 3/4 cup (95g) all-purpose flour, 1/2 cup (50g) cocoa powder, and 1/4 teaspoon salt.
  6. Gradually fold the dry ingredients into the wet mixture with a spatula until just combined. Avoid overmixing.
  7. Reserve about 2 tablespoons of crushed candy canes for topping. Fold the remaining crushed candy canes (about 1/3 cup) into the batter gently.
  8. Pour the batter into the prepared pan or scoop into mini muffin cups, filling about 3/4 full. Sprinkle the reserved crushed candy canes on top.
  9. Bake for 18-22 minutes: 18 minutes for mini bites, 22 minutes for a 9×9 pan. Check doneness with a toothpick; it should come out with a few moist crumbs.
  10. Let brownies cool completely in the pan on a wire rack before slicing or removing.
