Instructions

  1. Preheat your oven to 425°F (220°C). Butter two 6-ounce ramekins generously, then dust each with cocoa powder, tapping out the excess.
  2. Melt the chocolate and butter together using a double boiler or microwave in 20-second bursts, stirring frequently until smooth and glossy. Set aside to cool slightly.
  3. In a medium bowl, whisk the eggs and sugar together vigorously until pale, thick, and slightly frothy, about 3-4 minutes.
  4. Stir in the vanilla extract and a pinch of salt to the egg mixture.
  5. Fold the melted chocolate mixture into the eggs gently but thoroughly using a spatula.
  6. Sift the flour over the batter and fold it in carefully until no streaks remain, avoiding overmixing.
  7. Divide the batter evenly between the prepared ramekins, filling each about ¾ full.
  8. Bake for 12-14 minutes until edges are set and firm but the center is still slightly jiggly.
