Instructions

  1. Preheat your Belgian waffle maker according to the manufacturer’s instructions (about 5 minutes).
  2. In a large bowl, whisk together the dry ingredients: all-purpose flour, cornstarch, baking powder, salt, and sugar.
  3. In a separate bowl, combine the wet ingredients: separate the eggs, placing yolks in one bowl and whites in another. Add milk, melted butter, and vanilla extract to the yolks and whisk until smooth.
  4. Using an electric mixer, whip the egg whites until stiff peaks form.
  5. Pour the yolk mixture into the dry ingredients and gently stir until just combined; the batter will be thick with some lumps.
  6. Carefully fold the whipped egg whites into the batter using a spatula to keep it light and fluffy.
