A quick and easy breakfast recipe featuring crispy thick-cut bacon and perfectly cooked eggs, ideal for busy mornings or lazy weekend brunches.

Ingredients

Scale
  • 6 slices thick-cut bacon
  • 4 large eggs, preferably free-range and at room temperature
  • 1 tablespoon unsalted butter, softened
  • A pinch of kosher salt
  • Freshly ground black pepper, to taste
  • Optional garnish: chopped fresh chives or parsley

Instructions

  1. Preheat your skillet over medium-low heat for about 2 minutes.
  2. Lay 6 thick-cut bacon slices flat in the pan without overlapping. Cook gently, turning every 3-4 minutes for 10-12 minutes until deep golden-brown and crispy.
  3. Transfer bacon to a plate lined with paper towels to drain excess grease, keeping the bacon fat in the pan.
  4. Crack 4 large eggs into a small bowl one at a time.
  5. Add 1 tablespoon unsalted butter to the hot bacon fat in the skillet and let it melt.
  6. Carefully slide the eggs into the pan, spacing them out. Reduce heat to low.
  7. Sprinkle eggs with a pinch of kosher salt and freshly ground black pepper.
  8. Cook undisturbed for 3-4 minutes until whites are set but yolks still jiggle slightly.
  9. Optional: For over-easy eggs, carefully flip each egg and cook for an additional 20-30 seconds.
  10. Serve immediately with crispy bacon and garnish with chopped chives or parsley.

Notes

Cook bacon on medium-low heat to render fat slowly for even crispness. Use residual bacon fat to fry eggs for extra flavor. Let eggs come to room temperature before cooking. Keep heat low when cooking eggs to avoid rubbery texture. Use a thin, flexible spatula to flip eggs carefully. If bacon fat splatters, use a splatter guard.
