  • 2 pounds russet potatoes, peeled and cut into chunks
  • 1 bulb garlic, roasted
  • 12 sprigs fresh rosemary
  • 1 cup heavy cream
  • 4 tablespoons unsalted butter, melted
  • Salt to taste
  • Freshly cracked black pepper to taste
  • Optional garnishes: extra rosemary sprigs, drizzle of olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the garlic for roasting: Cut the top off the garlic bulb to expose the cloves. Drizzle with a little olive oil and wrap tightly in aluminum foil. Roast for 35-40 minutes until the cloves are soft and golden brown. Set aside to cool.
  3. While the garlic is roasting, peel and chop the potatoes into even chunks to ensure even cooking.
  4. Place the potato chunks in a large pot and cover with cold water. Add a generous pinch of salt and bring to a boil over medium-high heat.
  5. Reduce the heat to medium and simmer for about 15-20 minutes or until the potatoes are fork-tender.
  6. While the potatoes are cooking, heat the cream in a small saucepan over low heat. Add the sprig of rosemary and let it infuse for about 5 minutes. Remove the rosemary and set the cream aside.
  7. Drain the cooked potatoes and transfer them to a large mixing bowl.
  8. Squeeze the roasted garlic cloves out of their skins and add them to the potatoes along with the melted butter and rosemary-infused cream.
  9. Mash the potatoes using a potato masher or ricer until smooth and creamy. Adjust the consistency by adding more cream, if desired.
  10. Season with salt and freshly cracked black pepper to taste. Mix well to combine.
  11. Transfer the mashed potatoes to a serving dish. Garnish with a drizzle of olive oil and a few rosemary sprigs if desired.
  12. Serve warm and enjoy.
