  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)
  • ½ cup chopped sun-dried tomatoes packed in oil (about 75 g)
  • 3 cloves garlic, minced
  • 1 cup heavy cream (240 ml)
  • ½ cup chicken broth (120 ml), low-sodium
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup fresh basil, chopped (about 10 g)
  • 2 tablespoons olive oil (extra virgin recommended)
  • Salt and freshly ground black pepper to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Pat the chicken breasts dry with paper towels, then season both sides generously with salt and pepper.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once shimmering, add the chicken breasts and cook without moving for 4-5 minutes until the underside is golden brown. Flip and cook the other side for another 3-4 minutes. Remove chicken from the pan and set aside.
  3. Reduce heat to medium. Add minced garlic and chopped sun-dried tomatoes to the skillet. Stir constantly for about 2 minutes until fragrant and softened.
  4. Pour in ½ cup chicken broth, scraping up browned bits from the pan. Then add 1 cup heavy cream, stirring gently to combine. Bring to a light simmer.
  5. Sprinkle in ½ cup freshly grated Parmesan cheese, stirring until melted and sauce thickens slightly.
  6. Return chicken breasts to the pan, nestling them into the sauce. Simmer gently for 4-5 minutes, spooning sauce over the chicken occasionally until chicken is cooked through (internal temperature 165°F / 74°C).
  7. Stir in chopped fresh basil and adjust seasoning with salt, pepper, and optional red pepper flakes. Remove from heat.
  8. Let the chicken rest in the sauce for 2 minutes off heat before serving.

Notes

Pat chicken dry before seasoning to ensure a golden crust. Use fresh Parmesan cheese for a silky sauce. Cook sauce on medium-low heat after adding cream to prevent curdling. If sauce is too thick, add a splash of broth or cream; if too thin, simmer uncovered to reduce. Leftovers keep well refrigerated for up to 3 days; reheat gently with added liquid if needed.
