  • 2 large boneless, skinless chicken breasts (about 1 to pounds / 450680 g)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (15 ml)
  • 3 tablespoons unsalted butter (42 g), divided
  • 4 cloves garlic, minced
  • ½ cup chicken broth (120 ml), low sodium preferred
  • ¾ cup heavy cream (180 ml)
  • ¼ cup freshly grated Parmesan cheese (25 g), optional but recommended
  • 2 tablespoons fresh parsley, chopped
  • Optional: pinch of red pepper flakes
  • Optional: squeeze of lemon juice

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper.
  2. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat until butter melts and foams, about 2 minutes.
  3. Add chicken breasts to the skillet and cook undisturbed for 5–6 minutes on the first side until golden brown. Flip and cook the other side for another 5 minutes. Chicken should register 160°F (71°C) internally.
  4. Transfer chicken to a plate and tent with foil to rest.
  5. Lower heat to medium. Add remaining 2 tablespoons butter to the skillet. Once melted, stir in minced garlic and cook for about 30 seconds until fragrant but not browned.
  6. Pour in chicken broth and scrape up browned bits from the pan. Stir in heavy cream and bring to a gentle simmer. Let reduce slightly for 3-4 minutes, stirring occasionally.
  7. Stir in grated Parmesan until melted and smooth. Adjust seasoning with salt and pepper if needed. If sauce is too thick, add a splash of broth or cream.
  8. Return chicken breasts to the skillet, spoon sauce over them, and simmer for another 2 minutes to meld flavors and finish cooking.
  9. Garnish with chopped fresh parsley before serving.

Notes

Do not overcrowd the pan to ensure a golden crust. Use room temperature chicken for even cooking. Cook garlic just until fragrant to avoid bitterness. Simmer sauce gently to prevent breaking. Rest chicken after cooking to keep it juicy. Adjust sauce consistency with broth or cream as needed.
