A quick and easy creamy buffalo chicken dip that balances spicy heat with smooth creaminess, perfect for game day snacks and parties.

Ingredients

Scale
  • 2 cups (300g) shredded cooked chicken (rotisserie chicken works great)
  • 8 oz (225g) cream cheese, softened (full fat for creamiest texture)
  • ½ cup (120ml) buffalo hot sauce (Frank’s RedHot recommended)
  • ½ cup (120ml) ranch dressing (homemade or store-bought)
  • 1 cup (100g) shredded cheddar cheese (sharp cheddar preferred)
  • ½ cup (50g) shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Optional: ¼ cup (30g) crumbled blue cheese
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Soften the cream cheese by beating it with a hand mixer or whisk until smooth and creamy, about 2-3 minutes.
  3. Add buffalo hot sauce and ranch dressing to the cream cheese and beat until fully combined and color is consistent.
  4. Sprinkle in garlic powder and onion powder, stirring gently with a spatula.
  5. Fold in shredded cooked chicken, mixing evenly to coat all pieces.
  6. Stir in shredded cheddar and mozzarella cheeses. If using, fold in crumbled blue cheese.
  7. Transfer the mixture evenly into an 8×8-inch (20×20 cm) baking dish and smooth the top.
  8. Bake for 20-25 minutes until edges bubble and top is lightly browned.
  9. Garnish with chopped green onions before serving.

Notes

Ensure cream cheese is fully softened to avoid lumps. Tent with foil if dip bubbles too aggressively or browns too fast. Can be made ahead and refrigerated before baking. Leftovers reheat well in oven or microwave. For dairy-free or low-carb versions, adjust ingredients accordingly.
