  • 4 cups beef broth (low sodium recommended)
  • 1 large onion, sliced
  • 4 garlic cloves, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 1 tablespoon olive oil (optional, for searing)
  • 6 to 8 French rolls or baguette
  • Swiss cheese slices (optional)

Instructions

  1. Pat the chuck roast dry with paper towels. Season generously with salt and black pepper on all sides.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.
  3. Place sliced onions and minced garlic at the bottom of the slow cooker. Set the seared roast on top.
  4. Pour in beef broth, Worcestershire sauce, dried thyme, and dried rosemary. The liquid should come about halfway up the roast; add water if needed.
  5. Cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours until the meat is fork-tender.
  6. About 30 minutes before the roast is done, preheat oven to 375°F (190°C). Slice French rolls in half and lightly toast on a baking sheet until golden but still soft inside.
  7. Remove the roast from the slow cooker and shred the meat with two forks into bite-sized pieces. Return shredded beef to the slow cooker to soak up juices.
  8. Ladle some of the cooking liquid (au jus) into small bowls for dipping. Strain if desired.
  9. Assemble sandwiches by piling shredded beef onto toasted rolls. Add Swiss cheese if desired. Serve immediately with warm au jus on the side.

Notes

Searing the beef adds flavor and texture but can be skipped. Use better-quality beef broth for richer au jus. Toast rolls to prevent sogginess. For dairy-free, omit cheese or use plant-based alternative. Gluten-free rolls or lettuce wraps can be used for gluten-free option. If liquid reduces too much during cooking, add broth or water. Pressure cooker can be used to reduce cooking time to about 1 hour.
