Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan with butter or non-stick spray, or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the applesauce, granulated sugar, brown sugar, melted butter, eggs, and vanilla extract. Whisk together until smooth and well incorporated.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix.
  5. Pour the batter into your prepared pan, spreading it out evenly with a spatula. Smooth the top for an even rise.
  6. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  7. Remove the cake from the oven and let it cool completely on a wire rack.
  8. While the cake cools, prepare the cream cheese frosting. In a large bowl, beat the softened cream cheese and butter together until smooth and creamy.
  9. Add the vanilla extract and gradually mix in the powdered sugar, one cup at a time, until the frosting reaches your desired consistency. If it seems too thick, add a teaspoon of milk at a time to thin it out.
  10. Once the cake is completely cool, spread the frosting evenly over the top using a spatula or offset knife. For a smooth finish, dip your spatula in warm water and use light, even strokes.
