  • 1 tsp baking powder

  • ¼ tsp salt
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) brown sugar
  • ½ cup (115g) unsalted butter, melted and slightly cooled
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • ¾ cup (180ml) buttermilk or plain yogurt
  • 4 oz (115g) bittersweet or semi-sweet chocolate, chopped or chocolate chips
  • 1 tsp espresso powder (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line it with paper liners.
  2. In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Add granulated sugar and brown sugar, then whisk to combine evenly.
  3. Melt the butter in a small saucepan or microwave-safe bowl and let it cool slightly.
  4. In a separate bowl, whisk the eggs with vanilla extract. Add buttermilk and melted butter, stirring to combine smoothly.
  5. Pour the wet ingredients into the dry mixture and gently fold together with a spatula until just combined, leaving a few lumps.
  6. Fold in the chopped chocolate or chocolate chips and espresso powder if using.
  7. Spoon the batter evenly into the muffin cups, filling each about two-thirds full.
  8. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out with moist crumbs but no raw batter.
  9. Let the muffins cool in the tin for 5 minutes, then transfer to a cooling rack before serving.
