  • 4 medium-sized sweet potatoes, scrubbed clean
  • 4 tablespoons unsalted butter, softened and divided
  • 2 tablespoons pure maple syrup
  • 2 tablespoons heavy cream
  • 1 tablespoon brown sugar
  • Pinch of cinnamon
  • Dash of salt
  • Optional toppings: chopped pecans, walnuts, flaky sea salt

Instructions

  1. Preheat the oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper or foil.
  2. Scrub the sweet potatoes clean and pierce each one a few times with a fork. Place them on the lined baking sheet.
  3. Bake for 45-60 minutes, or until the sweet potatoes are fork-tender. Remove them from the oven and let cool for about 10 minutes.
  4. Cut each roasted sweet potato in half lengthwise. Gently scoop out the flesh, leaving a thin layer inside the skins to keep them sturdy. Transfer the scooped flesh to a mixing bowl.
  5. Add 2 tablespoons of softened butter, 2 tablespoons of heavy cream, 1 tablespoon of brown sugar, a pinch of cinnamon, and a dash of salt to the sweet potato flesh. Mash until smooth and creamy.
  6. Spoon the mashed filling back into the sweet potato skins, mounding slightly. Arrange them back on the baking sheet.
  7. Return the filled sweet potatoes to the oven and bake for another 15-20 minutes, until heated through and slightly golden on top.
  8. In a small saucepan over low heat, whisk together 2 tablespoons of softened butter and 2 tablespoons of pure maple syrup until smooth and glossy.
  9. Drizzle the warm maple butter over the baked sweet potatoes and sprinkle with optional toppings like chopped pecans or flaky sea salt.
