  • 2 cups cooked turkey, shredded or cubed
  • 1 cup wild rice, pre-cooked if short on time
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 1 onion, finely diced
  • 2 garlic cloves, minced
  • 2 tablespoons butter
  • 6 cups chicken or turkey broth, low-sodium preferred
  • 1/2 cup heavy cream (optional)
  • 1 teaspoon dried thyme or fresh thyme
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Heat butter in a large pot over medium heat. Add diced onion, carrots, celery, and garlic. Cook for 5-7 minutes until softened and fragrant.
  2. Pour in the chicken or turkey broth and bring to a gentle boil. Add the thyme and season with salt and pepper.
  3. Stir in the wild rice and cooked turkey. Reduce heat to low and let simmer for 20-25 minutes. If the rice was pre-cooked, simmer for 10-15 minutes instead.
  4. Stir in the heavy cream (if using) and let cook for another 5 minutes. Adjust seasoning as needed.
  5. Ladle the soup into bowls and sprinkle with fresh parsley. Serve hot with crusty bread or crackers.

Notes

Pre-cook the wild rice to save time. Adjust the consistency of the soup by adding more broth or water if too thick, or simmering uncovered if too thin. Leftovers taste even better as the flavors meld together.
