Sweet Potato Rounds with Honey & Feta Recipe

  • 2 medium-sized sweet potatoes, peeled and sliced into 1/2-inch rounds
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons raw or pure honey
  • 1/3 cup crumbled feta cheese
  • 2 tablespoons chopped parsley or cilantro (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Wash and peel the sweet potatoes. Slice them into 1/2-inch thick rounds—try to keep the sizes consistent for even cooking.
  3. Arrange the sweet potato slices in a single layer on the baking sheet. Brush both sides with olive oil and sprinkle with salt and pepper.
  4. Bake the sweet potatoes for 15 minutes. Then, flip each slice over and roast for another 10-15 minutes until the edges are caramelized and the centers are fork-tender.
  5. Remove the baking sheet from the oven and drizzle honey over each sweet potato round. Sprinkle crumbled feta on top and finish with fresh herbs.
  6. Transfer to a serving platter and enjoy warm. These rounds are best eaten fresh but taste great at room temperature too.
