Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground ginger (optional)
  • 1/2 teaspoon almond extract (optional)
  • Colored sugar or sprinkles for decorating (optional)

Instructions

  1. Gather all ingredients and let butter and egg come to room temperature.
  2. In a large mixing bowl, beat butter and sugar together until light and fluffy (about 2-3 minutes).
  3. Add egg and vanilla extract (plus almond extract if using); beat until combined.
  4. In a separate bowl, whisk together flour, salt, cinnamon, nutmeg, cloves, and ginger (if using).
  5. Gradually add the flour mixture to the butter mixture, mixing on low speed until just combined. Scrape down the bowl as needed.
  6. If dough is too firm, add a teaspoon of milk; if too soft, chill for 15 minutes.
  7. Load dough into a cookie press (or piping bag with star tip).
  8. Press rosette shapes directly onto ungreased, cool baking sheets, spacing about 1 inch apart.
  9. Decorate with colored sugar or sprinkles if desired.
  10. Bake at 350°F for 8-10 minutes, until edges are just turning golden.
  11. Let cookies sit on the tray for 2 minutes, then transfer to cooling racks.

Notes

For gluten-free or dairy-free adaptations, use a 1:1 gluten-free flour blend and plant-based butter. Chill dough if shapes aren’t holding, and always use cool, ungreased baking sheets for best results. Dough can be made ahead and refrigerated overnight for deeper spice flavor. Cookies freeze well for up to two months.
