Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar using an electric mixer on medium speed for 2-3 minutes until light and fluffy.
  4. Beat in the eggs one at a time, then add the lemon zest and vanilla extract.
  5. Add the fresh lemon juice and mix to combine.
  6. Gradually add the dry ingredients to the wet mixture, mixing on low speed just until combined. Avoid overmixing.

  11. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
