Crispy sweet potato fries seasoned with smoked paprika and paired with a creamy, spicy chipotle aioli for a delicious and healthy snack.

Ingredients

Scale
  • 2 medium-sized sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 cup mayonnaise
  • 2 chipotle peppers in adobo sauce
  • 1 tablespoon lime juice
  • Pinch of salt
  • Optional: black pepper, cayenne pepper, fresh parsley

Instructions

  1. Preheat the oven to 425Β°F (220Β°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. Slice the sweet potatoes into even-sized fries, about 1/4-inch thick.
  3. In a large bowl, combine sweet potato slices with olive oil, smoked paprika, garlic powder, and salt. Toss until evenly coated.
  4. Spread the fries in a single layer on the prepared baking sheet, ensuring they don’t overlap.
  5. Bake for 20 minutes, then flip the fries and bake for another 10-15 minutes, or until crispy and golden brown.
  6. In a blender or food processor, combine mayonnaise, chipotle peppers, lime juice, and a pinch of salt. Blend until smooth and creamy. Adjust seasoning if needed.
  7. Plate the fries, sprinkle with fresh parsley, and serve with chipotle aioli on the side.

Notes

[‘Ensure fries are spaced out on the baking sheet to avoid sogginess.’, ‘Turn on the broiler for the last 2-3 minutes for extra crispiness.’, ‘Adjust spice levels in both the fries and aioli to suit your taste.’]
