These savory muffin tin turkey and stuffing cups are like a mini Thanksgiving feast in every bite, combining tender turkey, seasoned stuffing, and rich gravy for a comforting meal.

Ingredients

Scale
  • 2 cups cooked turkey, shredded or diced
  • 4 cups prepared stuffing
  • 2 large eggs, beaten
  • 1/4 cup chicken or turkey broth
  • 2 tablespoons butter, melted
  • 1 cup gravy, store-bought or homemade
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375Β°F (190Β°C). Lightly grease a muffin tin with cooking spray or butter.
  2. In a large mixing bowl, combine the prepared stuffing, shredded turkey, beaten eggs, chicken broth, melted butter, and fresh herbs. Mix until well combined but not overly wet.
  3. Use a spoon or scoop to evenly divide the mixture among the muffin cups. Press gently to compact the mixture but avoid over-packing.
  4. Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the tops are golden brown and slightly crisp.
  5. Remove the muffin tin and let the cups cool for 5 minutes. They should hold their shape when removed.
  6. Warm your gravy on the stovetop or microwave. Drizzle generously over the turkey and stuffing cups, or serve on the side for dipping.

Notes

For a vegetarian option, substitute turkey with sautΓ©ed mushrooms or roasted vegetables and use vegetable broth. Add dried cranberries or roasted chestnuts for a festive twist. Ensure the muffin tin is well-greased to prevent sticking.
