  • 2 bone-in, skin-on turkey thighs
  • 2 tablespoons white miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon minced garlic
  • 1 tablespoon sesame oil
  • Chopped scallions for garnish
  • Sesame seeds for garnish (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375Β°F (190Β°C).
  2. In a small mixing bowl, whisk together white miso paste, soy sauce, honey or maple syrup, rice vinegar, grated ginger, minced garlic, and sesame oil until smooth.
  3. Pat the turkey thighs dry with paper towels and lightly season with salt and pepper on both sides.
  4. Using a basting brush or spoon, generously coat the turkey thighs with the miso glaze, ensuring full coverage.
  5. Place the glazed turkey thighs in a roasting pan, skin-side up, and roast for 35-40 minutes or until the internal temperature reaches 165Β°F (74Β°C). Rotate the pan halfway through cooking.
  6. Halfway through cooking, brush the turkey thighs with more glaze to enhance flavor and create a caramelized crust.
  7. Remove the turkey thighs from the oven and let them rest for 5-10 minutes.
  8. Garnish with chopped scallions and sesame seeds before serving.
