Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat a nonstick skillet over medium heat. Add chorizo, breaking it into small pieces, and cook for about 5 minutes until starting to brown.
  3. Add diced onion and minced garlic to the skillet. Sauté for another 3-4 minutes until onion is soft and fragrant. Drain excess oil if needed.
  4. In a large mixing bowl, combine baked beans, sour cream, and softened cream cheese. Stir until smooth and creamy.
  5. Layer the bean mixture in the bottom of an oven-safe skillet or baking dish. Even out with a spatula.
  6. Spoon the chorizo mixture evenly over the beans.
  7. Sprinkle shredded cheddar and Monterey Jack cheese evenly over the top.
  8. Bake for 18-20 minutes, or until cheese is melted and bubbly. For a crispy top, broil for an additional 2-3 minutes, watching closely.
  9. Remove from oven and let cool for 5 minutes. Garnish with sliced green onions and fresh cilantro.
