Instructions

  1. Finely chop 8 oz (225 g) of bittersweet or semi-sweet chocolate and place it in a heatproof bowl.
  2. Pour ΒΎ cup (180 ml) heavy cream into a small saucepan and heat over medium until it just starts to simmer, but do not boil (about 3-4 minutes).
  3. Immediately pour the hot cream over the chopped chocolate and let it sit undisturbed for 2 minutes.
  4. Slowly stir the mixture with a rubber spatula or whisk in gentle circles until glossy and smooth, about 1-2 minutes.
  5. Stir in 2 tablespoons (28 g) softened unsalted butter, 1 teaspoon pure vanilla extract, and a pinch of salt until fully combined.
  6. Let the ganache cool slightly for a pourable glaze or chill for 10-15 minutes to thicken for spreading.

Notes

Let the chocolate and cream sit for 2 minutes before stirring to ensure smooth melting. Use room temperature butter for better blending. Avoid boiling the cream to prevent grainy texture. For dairy-free, substitute heavy cream with full-fat coconut milk and use dairy-free chocolate.
