  • 16 oz mascarpone cheese
  • 1 cup pumpkin puree
  • 1 cup heavy cream
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin spice (cinnamon, nutmeg, ginger, cloves)
  • 2 cups brewed coffee
  • 2 tablespoons dark rum or coffee liqueur (optional)
  • Cocoa powder for dusting

Instructions

  1. Prepare the coffee: Brew 2 cups of strong coffee and let it cool to room temperature. Stir in 2 tablespoons of dark rum or coffee liqueur if desired.
  2. Whip the cream: In a mixing bowl, beat 1 cup of heavy cream with 2 tablespoons of sugar until stiff peaks form. Set aside.
  3. Make the mascarpone mixture: In another bowl, combine mascarpone cheese, pumpkin puree, vanilla extract, and pumpkin spice. Mix until smooth and creamy.
  4. Fold the whipped cream: Gently fold the whipped cream into the mascarpone mixture until fully incorporated.
  5. Dip the ladyfingers: Quickly dip each ladyfinger into the cooled coffee mixture, ensuring they’re moist but not soggy.
  6. Assemble the tiramisu: Arrange a layer of dipped ladyfingers in the bottom of your dish. Spread half of the pumpkin mascarpone mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
  7. Chill: Cover the dish with plastic wrap and refrigerate for at least 6 hours, ideally overnight.
  8. Finish and serve: Dust the top with cocoa powder using a sifter. Add crushed pecans or caramel drizzle if desired. Slice and enjoy!

Notes

For extra flavor, sprinkle crushed pecans or drizzle caramel sauce on top. Chill overnight for the best flavor and texture.
