These bite-sized puff pastry brie bites are the perfect blend of flaky, creamy, and sweet-savory goodness, making them an irresistible appetizer for any occasion.

Ingredients

Scale
  • 1 sheet puff pastry, thawed but still cold
  • 8 ounces brie cheese, cut into small cubes
  • 1 large egg, beaten (for egg wash)
  • Fruit preserves like raspberry, fig, or apricot (optional)
  • Cranberry sauce (optional)
  • Chopped nuts like pecans, walnuts, or almonds (optional)
  • Fresh herbs such as rosemary or thyme (optional)
  • Honey drizzle (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Thaw the puff pastry according to the package instructions, but make sure it remains cold. If it gets too warm, pop it in the fridge for a few minutes.
  3. On a lightly floured surface, unfold the puff pastry. Roll it out slightly to smooth any creases and make it an even thickness.
  4. Cut the puff pastry into 2-inch squares using a sharp knife or pizza cutter. You should get about 16 squares from one sheet.
  5. Place the puff pastry squares onto the prepared baking sheet, leaving a little space between each one.
  6. Place a cube of brie in the center of each square. Add a small spoonful of your chosen filling (like jam or cranberry sauce) on top of the brie.
  7. For extra flavor, sprinkle with your desired toppings, such as chopped nuts or herbs.
  8. Fold up the corners of each square over the brie and filling, pinching them gently to seal. Don’t worry if they aren’t perfect—this rustic look is part of their charm!
  9. Brush the tops of each puff pastry bite with the beaten egg to give them a beautiful golden color.
  10. Bake for 15-20 minutes, or until the puff pastry is golden and puffed up. Keep an eye on them during the last few minutes to prevent over-browning.
  11. Remove from the oven and let cool slightly before serving. They’re best enjoyed warm, but they’re still delicious at room temperature!

Notes
