  • 2 tablespoons fresh parsley, finely chopped (optional)
  • 1/2 teaspoon salt (kosher salt preferred)

  • 1/2 teaspoon smoked paprika (optional)

Instructions

  1. Thaw lobster tails overnight in the fridge or under cold running water if frozen. Use kitchen shears to cut down the top of the shell lengthwise to the tail fin without cutting the meat. Gently pry the shell open and lift the meat slightly, resting it on top of the shell.
  2. In a small saucepan, melt butter over low heat. Add minced garlic and cook gently for 3-4 minutes until fragrant but not browned. Stir in lemon zest, lemon juice, salt, pepper, and smoked paprika. Remove from heat and stir in parsley if using.
  3. Preheat grill to medium-high heat (375-400°F). Clean and oil the grates to prevent sticking.
  4. Place lobster tails shell-side down on the grill. Brush the exposed meat with garlic butter. Grill covered for about 6-8 minutes to steam and cook through gently.
  5. Flip tails meat-side down for 2-3 minutes to get a char and caramelization. Brush again with garlic butter during this step.
  6. Check doneness: meat should be opaque and firm, reaching an internal temperature of 140°F. If needed, move tails to indirect heat and close the lid for another minute or two.
  7. Remove from grill and let lobster tails rest for 3 minutes. Drizzle with remaining garlic butter before serving.
