  • 1/3 cup brown sugar
  • 1/3 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

  • 1/4 teaspoon ground nutmeg
  • Juice of half a lemon
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened almond milk (or any non-dairy milk alternative)
  • 1/4 cup melted coconut oil (or vegan butter for a richer taste)

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease your baking dish with non-stick spray or a thin coat of coconut oil.
  2. Peel and slice your peaches if they’re fresh, or drain them if using canned. In a mixing bowl, combine the peaches, brown sugar, granulated sugar, cornstarch, vanilla extract, cinnamon, nutmeg, and lemon juice. Toss until the peaches are evenly coated.
  3. In a separate bowl, whisk together the flour, sugar, baking powder, and salt. Add the almond milk and melted coconut oil, then mix until a smooth batter forms. Be careful not to overmix!
  4. Pour the peach mixture into the greased baking dish, spreading it out evenly. Dollop the cobbler topping over the peaches in small spoonfuls, covering most of the surface but leaving a few gaps for the filling to bubble through.
  5. Place the dish in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.
  6. Allow the cobbler to cool for 10-15 minutes before serving.
