  • 1/2 cup (100g) granulated sugar
  • 2 teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1/4 cup (30g) cornstarch
  • 1/4 teaspoon salt
  • 3/4 cup (150g) semi-sweet chocolate chips
  • 1/2 cup (100g) toffee bits

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.
  2. In a large mixing bowl, combine 1 cup (227g) of unsalted butter and 1/2 cup (100g) of granulated sugar. Using a hand mixer or stand mixer, beat until light and fluffy, about 2-3 minutes.
  3. Add 2 teaspoons of vanilla extract and mix until incorporated. Scrape down the sides of the bowl with a spatula to ensure everything is well blended.
  4. In a separate bowl, whisk together 2 cups (250g) of all-purpose flour, 1/4 cup (30g) of cornstarch, and 1/4 teaspoon of salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing on low speed until a dough forms. It will be crumbly at first but will come together as you continue mixing.
  6. Fold in 3/4 cup (150g) of semi-sweet chocolate chips and 1/2 cup (100g) of toffee bits with a spatula until evenly distributed.
  7. Using a tablespoon or a small cookie scoop, portion the dough onto the prepared baking sheets, spacing them about 2 inches apart. Gently flatten each ball of dough slightly with your fingers to form a disk.
  8. Bake for 12-15 minutes, or until the edges are just starting to turn golden brown. Be careful not to overbake—shortbread should be light in color.
  9. Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
