Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup butterscotch chips
  • ½ cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 3 tablespoons heavy cream (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • Optional: a pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.
  2. In a large mixing bowl, cream together 1 cup softened butter, 1 cup packed brown sugar, and ½ cup granulated sugar until light and fluffy (about 2-3 minutes).
  3. Beat in 2 large eggs, one at a time, followed by 2 teaspoons of vanilla extract. Mix until well combined.
  4. In another bowl, whisk together 2 ½ cups all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Fold in 1 cup of butterscotch chips using a spatula.
  6. Scoop the dough onto prepared baking sheets using a tablespoon or cookie scoop. Space them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are golden brown. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a cooling rack.
  8. To prepare the frosting, beat ½ cup softened butter in a mixing bowl until smooth and fluffy.
  9. Gradually add 2 cups powdered sugar, mixing well after each addition.
  10. Add 3 tablespoons heavy cream and 1 teaspoon vanilla extract. Beat until the frosting reaches your desired consistency. Add a pinch of salt if desired.
  11. Once the cookies are completely cool, spread or pipe the frosting onto each cookie.
  12. Optional: Sprinkle a few butterscotch chips or edible glitter on top for decoration.
