  • 1/4 cup heavy cream (optional)
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp garlic powder
  • 1 tbsp dried parsley
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup red bell pepper, diced (optional)
  • 1 cup spinach, roughly chopped (optional)
  • Hot sauce, a few dashes (optional)

Instructions

  1. Thaw hashbrowns completely and pat dry. Toss with melted butter and layer evenly into a greased 9×13-inch baking dish.
  2. Heat a medium skillet over medium heat. Brown sausage, breaking into crumbles, for 6-8 minutes. Add chopped onion and sautΓ© until translucent, about 3 minutes. Drain excess fat.
  3. In a large mixing bowl, whisk together eggs, milk, heavy cream (if using), salt, pepper, garlic powder, and parsley until smooth and slightly frothy.
  4. Spread cooked sausage and onions over hashbrowns in the baking dish. Sprinkle cheddar and mozzarella cheese evenly. Add optional veggies if desired.
  5. Pour egg mixture slowly over layered ingredients. Tilt pan gently to distribute liquid. Smooth top with spatula.
  6. Cover tightly with foil or plastic wrap and refrigerate for at least 8 hours, preferably overnight.
  7. Preheat oven to 350Β°F. Remove casserole from fridge, uncover, and let sit at room temperature for 15-20 minutes.
  8. Bake uncovered for 45-55 minutes, until center is set and top is golden. A knife inserted in the middle should come out clean.
  9. Let casserole cool for 10 minutes before slicing and serving.
